To celebrate its co-branding partnership on Shoprite 18- and 30-pack Ubrand and Ritebrand eggs, the Grow Great team held a special event for the community of Alexandra at the East Bank Mall last weekend.

TV and radio personality Penny Lebyane hosted the event, while chef Zola Nene prepared some delicious egg-based recipes for babies: isijingi with scrambled egg (6-8 months) and banana French toast (9-12 months). The parents and caregivers that were in attendance loved the recipes and we trust that they will have fun making the meals for their babies!

The audience also participated in a quiz on eggs and complementary feeding, with several winners walking away with 30-pack Ritebrand eggs.

Eggs are an excellent and affordable source of protein for babies 6 months and older, and feeding children just one a day can have a great impact on their growth and development. We are delighted that Shoprite could help us spread awareness on the importance of eggs play a role in mobilising South Africans towards zero stunting by 2030.

Here are the recipes:

  1. Isijingi (2 servings)

Ingredients

  • 115g ( ½ cup) pumpkin
  • 2 ½  cups of water
  • 2 tablespoons maize meal
  • 1 egg

Method

Boil pumpkin in ½ cup of water, then mash. Mix maize meal with 1 cup of water, then stir into mashed pumpkin. Simmer for 20 minutes until pap is cooked. Whisk egg, temper, then add to pap. Cook on low heat for 3 minutes to ensure egg is cooked before serving.

  • Banana French toast fingers (1 serving)

Ingredients

  • 1 banana
  • 1 egg
  • 1 slice bread
  • Small knob of butter

Method

Mash banana, then add egg. Remove bread crusts & cut into fingers. Dip into banana egg mix to coat. Melt butter in pan, then gently fry until golden. Make sure to cook thoroughly.
